Blue Lagoon Overnight Oats

The superfood obsession continues with this one. Superfoods have helped me immensely in my path to healing. I’ve slowly overtime built up my collection and am so grateful to be able to use them in so many recipes.

Fruits like blueberries are a superfood all in their own respect. Packed full of antioxidants, these lil’ berries can help prevent cancer, lower blood pressure, improve memory and brain function, can fights UTI’s and can help you recover quicker from a tough workout by providing protection to your muscles. Yes! They can do ALL of that!

I added some spirulina to up the superpowers of the blueberries. This stuff is 100% organic, will add amazing color to anything you put it in, and has a lot of the same benefits as those little blueberries we were just talking about. Anytime you can add an extra nutrient kick to anything - do it! Your body will thank you for it.

Makes 2 jars:

The Goods:

  • 2 cups almond milk

  • 1 tsp spirulina powder

  • 2 tsp maple syrup (use more if you like it sweeter)

  • 1/2 cup blueberries + more for the top

  • 2 cups oats

  • 1/2 cup dairy free yogurt + extra if needed

  • 2 kiwis, sliced

The Method:

Note: this method is to get the layered look, if you’d like easier steps, just blend the blueberries and the spirulina together with the nutmilk. If you want to make these for the whole week for 1 person, just double the recipe.

  1. In a blender, add half of the almond milk, 1/4 cup of blueberries and 1 tsp maple syrup. Blend on high until everything is combined and the milk is blue.

  2. In a medium bowl, add 1/2 the oats. Pour the blueberry milk over the oats and mix well. Set aside.

  3. Rise out your blender and add in the rest of the nut milk.

  4. Add the spirulina and the rest of the maple syrup. Blend well.

  5. In a different medium bowl, add the rest of the oats and the spirulina milk, mix well.

  6. Grab two jars and start layering.

  7. Layer however you want! I like to do yogurt on the bottom with layered oats and fruit in-between.

  8. Let sit overnight and enjoy for breakfast!
