Banana Fosters Chia Pudding

Who here has never had banana fosters dessert before?

If you know, you know, but if you are wondering what i’m talking about, I’ll fill you in. Banana fosters typically a dessert made from bananas and vanilla ice cream, then topped off with a sauce made from butter, brown sugar, cinnamon, and dark rum. Yum!! It’s the perfect recipe for your loved ones with a sweet tooth. We’ll this time around, I took the classic dessert and turned it into a high powered breakfast packed with tons of healthy vitamins, micro-nutrients, and macro-nutrients.

This recipe is:

  • dairy free

  • gluten free

  • high protein

  • full of essential nutrients

  • packed with antioxidants

  • high fiber

Tip: You can use omit/swap the nut butter if you have allergies. In my opinion, I thought the cashew butter was light and creamy with the banana fosters!

Makes 4 chia puddings

The Goods:

  • 1 cup chia seeds

  • 3 1/2 cups favorite choice of plant milk or homemade cashew milk

  • 1 tbsp Big Tree Farms brown coconut sugar

  • 1 tbsp vanilla extract

  • coconut yogurt

  • cashew butter

  • cinnamon

For the glazed banana:

  • 2 tbsp coconut oil

  • 1/4 cup Big Tree Farms brown coconut sugar

  • 1/4 cup dark rum

  • 3 very ripe bananas, peeled & sliced

  • 1/4 cup chopped walnuts

The Method:

  1. First, add your chia seeds, plant milk, coconut sugar, vanilla extract into a large bowl or tall 32oz jar. Stir until everything is fully mixed. Let it set in the fridge for 20-30 minutes, but stir it every 5 minutes to prevent clumping.

  2. Next is the glazed banana. Heat a large non stick or stainless steel sauté pan on medium high heat with coconut oil.

  3. When the coconut oil is completely melted, add the coconut sugar. Mix and soak up the sugar with the hot oil.

  4. After about 60 seconds, add in your dark rum. Stir and reduce the liquid down for 1-2 minutes. Keep continuously stirring to prevent any burning.

  5. When the rum is really bubbling and all the sugar is dissolved, add in your sliced banana and walnuts. Mix around for one minute and fully coat the bananas in the glaze, then remove from heat and let it cool slightly before using.

  6. Once the chia is soft and ready, grab 4 (160z) mason jars, coconut yogurt, cashew butter, and the glazed banana mixture. Start to build your chia puddings. (This is for meal prepping)

  7. Layer chia pudding. My way of doing it, is I start with a few spoonfuls of chia in the bottom of each jar, then a few generous spoonfuls of coconut yogurt. Next I add a big spoonful of cashew butter, a generous amount of the banana glaze mixture, and lastly garnish with a pinch of cinnamon over the top!

  8. Enjoy immediately or meal prep for a delicious high protein snack on the go.
