Spicy Oil-free Giardiniera

Giardiniera is pronounced jar-din-air-ah….or is it gar-din-air-ah? It depends on who you ask. For those from Chicago, it’s a staple in every kitchen, pizza joint, and hot dog stand. If you know you know.

For those whom have never heard of giardiniera, it’s a spicy blend of pickled vegetables that includes peppers, carrots, celery, and cauliflower in an oily or vinegar based brine. It’s a great and super versatile condiment that goes perfectly with tons of different foods. Usually they can be super spicy, but the beauty of creating fresh made giardiniera is you can control the spicy level, the sweetness, and add in only your favorite veggies.

Makes one 64oz jar:

The Goods:

For the veggies:

  • 1/2 head cauliflower, cut into small pieces

  • 1 jalepeno, sliced

  • 4 carrots, sliced

  • 4 celery stalks, sliced

  • 1/2 large red onion, small slices

  • 7-8 whole garlic cloves, peeled

For the vinegar mix:

  • 1 1/2 cup white wine vinegar

  • 1 1/2 cup water + extra water if needed

  • 1/4 cup Big Tree Farms coconut sugar

For the spices:

  • 1 tbsp salt

  • 1 tbsp fennel seeds

  • 1 tbsp cumin seeds

  • 1 tbsp black peppercorns

  • 1 tbsp mustard seeds


The Method:

  1. This recipe is quick and fast, but takes some time afterwards to sit and marinate. First, prep and toss all your veggies into a large bowl and mix.

  2. Next, grab a large 64 oz jar and add all your spices to the bottom of the jar. Then with your hands, stuff the jar with all your prepped veggies until it is 3/4 full.

  3. Now add in your vinegar mixture to the veggies in the jar. Cap the lid, and shake vigorously for 60 seconds to release all the spices throughout the jar of veggies. (leaving the jar 3/4 full gives it a chance to shake around)

  4. Lastly, add the remaining veggies into the rest of the jar, and if there is still space for liquid, just add extra water until all the veggies are complete immersed.

  5. Store in the refrigerator for 7 days before first use. Best to use within 4-6 weeks after the initial use.

  6. Best served on top of hot dogs, sub sandwiches, burgers, etc.
