Watermelon Mint Margaritas

Watermelon plus mint together in a bowl is so yummy and delicious. Watermelon plus mint plus mezcal with a salted sugar rim…..spectacular!

Summer time is finally here and I am buying up all the best watermelons I can get my hands on. The farmers markets in San Diego have been popping off with an abundance of fruits, veggies, and of course melons. Best part? There is a farmers market everyday…. if not multiple markets everyday! One of the 1000’s of other reasons why I love living here.

My tips for finding the best watermelon:

1. if it has a yellow spot on one side, it usually means it has had time to sit and ripen

2. if you knock on it, and it echos back….not too short, not too long of an echo…then you found yourself a perfect one. Number two is all feel. You will learn one day young grasshopper.

One of my favorite things to do right now is chop up watermelon into small cubes and mix it will a bunch of minced mint. So I took this idea and ran with it. Straight into a margarita! The salt & coconut sugar rim paired with the mint and watermelon give the drink a bold taste that anyone will love. Sit back and enjoy this at your next summer BBQ, party, or afternoon happy hour!

Makes 2 Margaritas or Mocktails:

The Goods:

Equipment:

  • Cocktail shaker with lid strainer

  • 2 rocks glasses

  • muddler

  • Ice

For the salt & coconut sugar rim:

  • 3 tbsp flakey sea salt or black salt

  • 3 tbsp Big Tree Farms coconut sugar

For the Margaritas:

  • 3 oz mezcal

  • 1.5 oz lime juice

  • 6 oz fresh watermelon juice

  • 4-5 mint leaves

The Method:

  1. Pour your salt & sugar onto a small plate with edges, and shake to evenly mix both. Set aside.

  2. Next prep your glasses. Take a lime, split in half, and use one side to coat the rim of the glasses in lime juice just enough to get it wet. Hold the glass upside down, and coat the wet rim on the salt & sugar mixture. Fill glass 3/4 way with fresh ice, and repeat on other glass.

  3. Into a cocktail shaker, add your lime juice and mint and muddle gently for 3-5 seconds. (you want to muddle the mint, not shred the mint)

  4. Add the mezcal, watermelon juice, and fill shaker 2-3 way full of ice. Cap with a lid and shake vigorously for 15-20 seconds. (Dance around and let loose!)

  5. Strain evenly into both glasses. Garnish with a mint leaf.

  6. It’s summer time, enjoy yourself! If you are making a mocktail version, just sub the mezcal for extra watermelon juice.
