Vitamin C Bliss Smoothie Bowl With Grain Free Granola

Summer is here. Right here…literally in this Vitamin C Bliss Bowl! Forget about taking that silly Vitamin C supplement when you can just start your day off with this recipe. This smoothie bowl is super light, refreshing, and packed with loads of goodies to keep you feeling great all summer long.

Vitamin C is one of the most important vitamins to get throughout the day. For starters, it supports a healthy immune system with antihistamine properties. Plus, Vitamin C contains cancer fighting properties that help support collagen formation in tendons and muscles too. And it’s great for your skin by softening lines and wrinkles, protecting against sun damage, and reducing inflammation throughout the body. All these benefits to keep your healthy, vibrant, and radiant for these long summer months.

With the hot days rolling by, you will find this smoothie bowl recipe your new best friend. I also sneaked in some yellow summer squash that gave this a really smooth texture without anybody noticing. Then I topped with off with grain free granola, that’s oven free, gluten free, and refined sugar free using my go to coconut sugar from Big Tree Farms, Vanilla Coconut Sugar.

Makes 2 smoothie bowls:

The Goods:

  • 1 1/2 cups frozen mango

  • 1 1/2 cups fresh cantaloupe

  • 1 whole yellow summer squash

  • 1 whole orange, peeled

  • 1/2 cup chilled coconut water

  • 1 lime juiced

  • 1 1/2 cups ice

For the Grain Free Granola:

  • 1/2 cup raw cashews

  • 1/2 cup raw blanched slivered almonds

  • 1/2 cup dried blueberries

  • 1/4 cup Big Tree Farms Vanilla Coconut Sugar

  • 3 tbsp melted coconut oil

  • 1 tbsp chia seeds

  • 1 tbsp flax seeds

The Method:

  1. First, make the granola so it has time to cool. Grab a large sauté pan, add all your ingredients for the grain free granola, and turn on medium high heat. Stir consistently with a rubber spatula for 8-12 minutes, make sure to scrape the bottom of the pan as your stir to prevent any burning to occur.

  2. Once everything is turning a nice golden color, remove from heat. Line a large plate with parchment paper, and spread hot granola over the paper. Place into a fridge for 10-20 minutes to cool down, or until your smoothie bowls are ready.

  3. Now for the Vitamin C bliss bowl! Into a large high powered blender, add the frozen mango, cantaloupe, yellow squash, whole orange, coconut water, and lime juice. Blend on high for 15-25 seconds until everything is nice and smooth.

  4. Now add the ice and blend again for 10-15 seconds to get the mixture cold and thick.

  5. Quickly grab your two serving bowls, divide your Vitamin C smoothie into both. Grab your granola from the fridge and break off a few pieces to garnish your bowl.

  6. Feel free to garnish with extra cantaloupe, fresh mango, orange slices, or any fruit of choice. I kept it simple and only garnished with the grain free granola.

  7. Enjoy immediately with smiles and good vibes!
