Vegan Flan

Creme caramel. Carmel custard. Egg pudding. Carmel pudding. Flan. Call it any custard dessert name you want, either way this one hits home. It reminds me of birthday parties and celebrations growing up, that ended on a high note if flan was served. But unfortunately since going completely plant-based, I have not come across anywhere that creates this amazing dessert vegan style. Thats when I decided to get creative and with some testing I have created the perfect vegan flan! Great dairy free, egg free and refined sugar free dessert made with simple, easy ingredients. I know you’ll love this one!

The Goods:

For the Flan:

  • 1 cup cashew milk

  • 1 can coconut cream

  • 1/4 cup + 2 tbsp coconut sugar

  • 3 tbsp tapioca flour

  • 1 tsp agar agar

For the Caramel:

  • 1/4 cup coconut sugar

  • 1/4 cup filtered water

The Method:

  1. Toss all flan ingredients into a high powered blender and blend till smooth.

  2. Pour contents into a small sauce pan and cook on medium low heat for 6-8 minutes. More on the low side. You want to heat this up but not burn it. It will be thin to begin with then it will transform to a thick and heavy consistency. Stir with a whisk consistently for the entire time. Do not leave unattended, or it will burn!

  3. Once it has reached the desired texture, remove from heat and set aside. Next pour carmel ingredients into a separate sauce pan, and cook on medium/low heat. Stir with a rubber spatula consistently for 2-4 minutes and reduce contents by half. Remove from heat, set aside.

  4. Depending on your desired portion sizes you can pour it out how ever you like. One big one? Three or four smaller ones? You choose. But how you pour it is important.

  5. For example, we used two 5 inch ramekins. First, cover the bottom with a thin layer of caramel and then carefully pour flan mixture on the top, all the way to the brim. Cover and cool for 3-6 hours, typically best cooled overnight.

  6. When ready to eat, quickly pull out from the fridge and place the ramekin bottom in 2 inch lukewarm/hot water for 1-2 minutes, like a bowl filled with a small bit of warm water. Be careful not to get any water inside the ramekin. This loosens the flan inside. Carefully with a knife loosen the flan by separating the edges.

  7. Grab a small plate with edges, place on top of the ramekin and squeeze together with both hands, quickly flip the two over, the flan releases, and viola!

  8. Garnish with favorite local berries and mint. Enjoy with smiles!
