Citrusy Tomato & Avocado Salad

It’s summer and you know what that means? It’s a great time for all sorts of produce from the peak of summer like berries, tomatoes, leafy greens, herbs, etc. I was walking around my farmers market and the one thing I really noticed were the colors. There were a plethora of colors of the rainbow, from the deep reds from the tomatoes, light purple from the red onions, and the bright greens from all the leafy greens. It was all so beautiful, and I wanted to create a dish that embodied this feeling.

If you know me, you know how much I enjoy making amazing unique plant based recipes. However, its nice and refreshing to come back to the basics and create a really simple dish that has the ingredients speaking for themselves. In honor of pride month in June, I wanted to make our recipes bright and colorful, which also means nutrient dense. This quick, simple, and easy salad recipe will make you look at salads in a whole new light. Under 10 ingredients and bursting with flavor.

This dish will play along as a side dish or it will hold up all on its own. Perfect for this summer BBQ when you want something healthy with clean and easily accessible ingredients. Made in under 10 minutes, you’ll be asking yourself why you didn’t make this sooner!

Makes 2-3 portions:

The Goods:

  • 2 cups cherry tomatoes, sliced in half

  • 1 large avocado, diced

  • 1/4 cup chopped cilantro

  • 1 cup corn kernels

  • 1/2 cup red onions, sliced

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 tbsp organic olive oil

  • 1 lime juiced

The Method:

  1. Grab a large mixing bowl, toss in your prepped tomatoes, avocado, cilantro, corn, and red onions. In a small mason jar, add your salt, pepper, olive oil, lime juice and stir until mixed.

  2. Pour your liquid mixture over your veggies and toss with two forks or clean hands until everything is fully coated.

  3. Refrigerate and chill for 6+ hours or enjoy immediately. Enjoy as a quick and easy mid day snack by itself or as a perfect side dish!
