Sweet Potato Fries w/ Spicy Cashew Sauce

Ahh french fries, the ultimate frenemy. When I was a bartender, french fries always saved my life from a major hunger meltdown, but immediately followed with that guilt of wait, did I really eat that many fries?

They’re the perfect snack, hangover cure and hit all the cravings! Sweet potato baked fries are a perfect substitution and craving fix for those moments you really need some fries in your life! These are simple and have been my staple for years. Replacing the white potato with the sweet adds a supercharge of antioxidants, beta carotene, magnesium and vitamin C. Can your regular fries do all that? Not so much.

To top it off, I dunk these in the spicy cashew sauce with the cashew cream as a base. This is a great example how one “base sauce” can be used in many different recipes. SO much deliciousness its almost too much to handle!

Pair with your favorite plant based burger or serve these for happy hour at your house with friends.

Makes a basket of fries:

The Goods:

  • 1-2 large sweet potatoes, washed

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp oregano

  • 1 tsp cumin

  • 1 tsp paprika

For the spicy cashew cream:

  • 1/2 cup cashew cream

  • 1/2 lime, juiced

  • 1 tbsp (or more) Sirarcha (or your fav hot sauce!)

For the garnish:

  • cilantro leaves

The Method:

  1. Preheat oven to 400*.

  2. Cut sweet potato in 3 inch long strips, leaving the skin on.

  3. Grab a sheet pan and throw the cut potato on top.

  4. Top the potato strips with oil, salt, pepper, oregano, cumin and paprika.

  5. Mix well with your hands on the sheet pan making sure everything is coated.

  6. Bake for 25-30 minutes.

  7. While your fries are cooking, make your sauce by mixing cashew cream, lime, and your hot sauce.

  8. Once the fries are done, garnish with cilantro and dip with sauce! Enjoy!
