Spicy Sesame Pulled Jackfruit Mango Sliders

Eating the RAINBOW all summer and these sliders are absolutely no exception! This recipe is an explosion of flavor and actually so easy and quick to make! I buy the jackfruit in a can and then cook it down in a Big Tree Farms Coco Aminos based sauce for about 15-20 minutes. You can absolutely cook this in a slow cooker or pressure cooker too just add 1/2 cup more veggie broth if you do!

This recipe is great for meal prep as we made this for just 2 of us and it lasted us for 3 meals! I paired this with The Activated Charcoal Spelt Slider Buns and holy moly was it a good match. While your buns are rising, just cook the jackfruit and while the jackfruit + buns are cooking, make your mango slaw. The Perfect summertime meal full of flavor, nutrients and all those good vibes.

Makes: 12 Slider Buns

Prep time: 20 minutes

Cook time: 20 minutes

The Goods:

The Jackfruit:

  • 1 tbsp sesame oil

  • 2 cloves garlic, peeled and minced

  • 3 green onions, chopped

  • 1 shallot, peeled and chopped

  • 1- 2 Serrano pepper, seeded and chopped

  • 2 can jackfruit, drained + chopped

  • salt + pepper

Sauce for jackfruit:

Mango Slaw:

  • 2 cups purple cabbage, thinly sliced

  • 1 carrot, grated

  • 3 green onions, chopped

  • 2 radishes, sliced

  • 1/2 mango, peeled and chopped

  • 1 tbsp vegan mayo OR cashew cream

  • 1 lime

  • 1 tbsp rice vinegar

  • 1 tbsp Big Tree Farms coco nectar

  • 1 tbsp liquid aminos

The Sliders:

The Method:

  1. In a deep saucepan, over medium high heat, add sesame oil, garlic, shallot and green onion. Toss a pinch of salt on top and stir for about 2 minutes.

  2. Add Serranos and stir for a minute more.

  3. Add jackfruit and cook for about 5 minutes,

  4. While your jackfruit is cooking, add everything for the sauce in a mason jar and mix well.

  5. Add sauce to jackfruit, mix well and cover. Cook for about 15 minutes while stirring occasionally to avoid burning.

  6. While the jackfruit is cooking, grab a bowl and toss everything for the slaw inside. Taste test for saltiness and sweetness. Set aside.

  7. Assemble your sliders with the buns, jackfruit, avocado, tomato, cilantro and mango slaw! I like to mash the avocado and put on the bottom but its up to you!

  8. Enjoy immediately as sliders or store the different components separately to save for later!
