Roasted Beet Hummus

Makes enough for about 4 people to snack - this hummus is a great addition to a wrap as well!

The Goods:

  • 1 medium red beet (peeled and diced)

  • 2 tbsp high quality organic olive oil

  • 1 tsp salt 

  • 1 tsp ground black pepper

  • 1 tbsp chopped garlic

  • 1 lemon, juiced

  • 1 can garbanzo beans, drained

  • 2 tsp tahini

The Method: 

  1. Place beets into a steamer basket. Steam for about 20-30 minutes or until the beets are fork tender. 

  2. Once the beets cool, add them to a food processor.  Add the rest of the oil, garlic, lemon juice, garbanzo beans, salt, pepper, and tahini paste. Blend until all ingredients make a smooth dip.  Salt to taste.

  3. Store in an airtight container for 4-6 days.
