Protein Packed Cookie Dough Bites

I am absolutely a sucker for cookie dough. When I was young, I would make cookies all of the time, it was (like most people) my intro to being able to cook by myself. And of course, only about half the cookies would make it to the oven because well, the rest, was too good as dough to make it there.

Now as an adult, I am a huge snacker, and believe that success with eating a plant based diet has a lot to do with planning ahead, meal prep and having food to fuel you all day long. I wanted to make a high protein cookie dough that not only satisfies my sweet tooth, but fulfills my childhood craving while still fueling my body! Garbanzo beans are the perfect addition here as they are so amazing for our overall health and perfectly neutral to be transformed in this recipe.

This recipe is so simple, and comes together quite effortlessly. I absolutely love it out of the freezer and crumbled into a chocolate smoothie for the most epic snack!

Makes 24 cookie dough bites:

The Goods:

  • 1 cup rolled oats

  • 2 cans garbanzo beans, drained and rinsed

  • 1/2 cup maple syrup

  • 1 tsp vanilla extract

  • 1 cup almond butter

  • 1 cup almond meal

  • 1 1/2 cups dark chocolate chips

  • 1 tsp coconut oil

  • flakey sea salt

The Method:

  1. Add your oats to a food processor and process on high until you get an oat flour.

  2. Next up, add the rest of the ingredients except the chocolate chips and coconut oil. Process or blend on high for about 2 minutes until everything is well combined.

  3. Grab a sheet pan or a large plate and line with parchment paper so these babies don’t stick. Use your hands or a mini ice cream scoop to roll these into bite size balls. Since we aren’t baking these, roll them into whatever size works for you! Pop them in the freezer for 15 minutes while you melt the chocolate.

  4. In a glass bowl, add the chocolate chips and the coconut oil. Either pop on a double boiler to melt or microwave in 30 second increments while stirring with a rubber spatula in between each. Once the chocolate is melted remove from heat to avoid burning.

  5. Grab the cookie dough bites from the freezer and drizzle the chocolate over the top. Finish with a pinch of flakey sea salt on each one. To harden add back into the freezer for 20 minutes before transferring to a fridge + freezer safe container. Enjoy!
