Chocolate Strawberry Mock-Tini

I’ll be real with you, I love everything chocolate. Mix it with strawberries and you have a match made in heaven. I originally was going to create a dessert for this valentines day recipe edition, but I didn’t want to bake anything or get out my food processor or wait around. I thought something like a chocolate covered strawberry would be amazing. Then I had a wild idea to combine these to make a decadent mocktail instead. No waiting, just instant chocolate gratification!

This mock-tini hits all the pleasure points while staying clean and healthy. Made with fresh and simple ingredients, plus don’t forget it’s a non-alcoholic, dairy free martini that will impress anyone you’re with. You can double the simple syrup part of the recipe to keep in the fridge for later when you get that chocolate fix too. Cuz trust me, you will want seconds….or even thirds.

The best part of the recipe is you can switch up the fruit with your favorite alternative, maybe raspberries or blueberries? Or just keep it simple with strawberries? You choose, just remember to have fun with this one, and of course have a happy Valentines Day!

Makes 2 Martinis

The Goods:

For the chocolate coconut simple syrup:

  • 3 tbsp cacao powder

  • 3 tbsp Big Tree Farms coconut sugar

  • 1/4 cup hot water

For the melted chocolate syrup:

  • 1/2 cup chocolate chips

  • 1 tbsp coconut oil

For the Martinis:

  • 1 cup cashew milk

  • 4 strawberries, divided (2 for the shaker, 2 for the martinis)

  • 3 tbsp chocolate coconut sugar simple syrup

  • Drizzle of melted chocolate syrup

  • 1 tbsp chocolate chips, minced and crumbled

  • Ice

The Method:

  1. In a kettle, heat water for the simple syrup. Pour cacao powder, coconut sugar, and hot water into a mason jar, stir until fully mixed. Set aside.

  2. Next grab a small sauce pan and fill with water half way. Heat on medium heat until almost boiling. On top of the heating sauce pan, place a steel bowl to create a double boiler for the melted chocolate.

  3. Add 1/2 cup chocolate chips and coconut oil into the steel bowl, then stir with a spatula until chocolate chips are melted. Remove from heat. Grab your two martini glasses, and with a spoon drizzle melted chocolate around each glass. Place glasses into the fridge while you make the mocktail.

  4. Into a cocktail shaker, add chocolate coconut simple syrup and 2 strawberries, and muddle for 5-10 seconds. Then add cashew milk and few handfuls of ice. Shake vigorously for 10 seconds.

  5. Grab your martini glasses from the fridge. Place 1 strawberry into the bottom of each glass. Evenly distribute mocktail into both drinks. Many cocktail shakers have a strainer built into the lid so use this to pour into the martini glasses. When pouring into the glasses, the muddled strawberries may clog the strainer, so shake the shaker as you pour. This will take quite a few shakes, so be patient.

  6. Garnish the tops with a pinch of minced/crumbled chocolate chips. Enjoy immediately at your next party to make your friends jealous or impress your date on Valentines Day!
