Vegan Thanksgiving Menu

Thanksgiving for most Americans is about the Turkey and Football. For me, it couldn’t be more different. Over the years as I’ve learned more about our history and the realities of animal agriculture, it’s been a huge mission of mine to rethink how we participate in this holiday. It should be a holiday where we are grateful, of course, but it should also be a time where we contribute to the betterment of the world around us rather than contribute to more harm. This is a time to respect our planet, indigenous cultures that came before us and our bodies as well!

Baked Brie with Pomegranates and Persimmons

Guaranteed the best dish on your dinner table when the holidays arrive. Period! This creamy, cheesy, delicious dairy free brie cheese is super simple and easy to make. With just a lil bit of patience, this cashew based cheese will hopefully become one of your staple recipes in your kitchen.

Herbed Dutch Oven Spelt Bread

This is my #1 go-to bread recipe! It’s perfect for cheese boards and is the best addition to any meal. Easy to make and with a little bit of planning you’ll get a fermented and absolutely delicious bread ready for your holiday table.

Cranberry Skillet Stuffing

Definitely remember to save this vegan stuffing for the holidays. This dish is simple, healthy, and plant based. With the bite from the onion and shallot, the sweetness from the pear, the saltiness from the broth, and the freshness from the herbs, it’ll be a flavor explosion for your taste buds. Perfect for the holiday dinner table and can be made gluten free! I prefer using fresh cranberries instead of dried because they give a brighter and more fresh flavor without all the added sugar. Best served warm.

Stuffed Maple Glazed Acorn Squash

This is the perfect holiday (and non holiday) dish that will satisfy every type of eater. It has the flavors of your favorite stuffing with the presentation to impress! This is the ultimate dish to bring to a relatives house, a friends-giving or to make for a cozy date night for two. I served it up with mulled wine last week for a dinner party and it was the perfect pair.

Apple Persimmon Galette

The Galette is the ultimate lazy pie and its so delicious! This crust is flakey, buttery and crusted with pecans so it’s the perfect switch up to the typical apple pie. This is sure to be one of your new favorite recipes and is suitable for any level of cook. It can be sweet for summer with berries, or savory with veggies and garlic. The possibilities are endless and you’ll be so happy you ditched the store bought pie crust and dove into this recipe!
