Coconut Vanilla Mint Lemon-Drop

Did somebody say lemon drop shots? or Lemon drop martini? I think it was my guilty conscience! A perfect balance of sweet and sour, with not a slightest bit taste of alcohol (usually vodka). White sugar rimed glass, with a light lemony tart shaken drink inside. I would think it’s safe to say, at one point within the first 5 years, when you become legal age, you’ll be with somebody who orders a lemon drop martini or shot. They are popular in most places throughout America, pretty much a majority of bars will be able make you a lemon drop drink, shot, or martini anytime quite honestly.

This time around, I wanted to create a healthy refined sugar free version that’s also free of alcohol. I created this into a beautiful fusion of mint, lemon, the vanilla infused coconut sugar from Big Tree Farms. It’s a slightly sweeter and rounded out flavor that instantly hits your tastebuds with each sip around the rim. All these textures and flavors are shaken together in a delicious dance.

Refined sugar free, alcohol free, guilt free. Perfect for any occasion and so classy looking too. You will impress anyone you know with these mocktails….. especially on your next date night…..hint hint. Or served at your next get-together. Or just sitting down for lunch and wanting to take it to the next level. You know, to feel like you’re treating yourself. Cuz remember, there’s never a bad time to treat yourself!

Making shots?

Toss that 1 oz simple syrup, that would have gone into the two martinis, into the shaker with everything else. Shake together and pour into 4 sugar rimmed shot glasses. Garnish with a splash of soda water into each, and enjoy a cheers to the good life! Enjoy!

Makes 2 Martinis

The Goods:

For the vanilla coconut simple syrup:

  • 1/2 cup Big Tree Farms vanilla coconut sugar

  • 1/2 cup filtered hot water

  • 1/4 tsp vanilla extract

For the Martinis:

  • 2 oz lemon juice

  • 1 oz fresh squeezed orange juice (1/2 an orange)

  • 1 oz filtered water

  • Big Tree Farms vanilla coconut simple syrup

  • 5 mint leaves

  • 2 oz soda water

  • lemon zest and extra dusting of vanilla coconut sugar for rim

The Method:

  1. In a kettle, heat water for the simple syrup. Pour vanilla coconut sugar, vanilla extract and hot water into a mason jar, stir until fully mixed. This is your simply syrup, set aside. (Reminder: you will have extra for multiple mocktails)

  2. Grab a small plate, pour lemon zest*** (shaved lemon skin from a cheese grater) and an extra dusting of vanilla coconut sugar onto it. Take your two martini glasses, and wet the rim with a lemon or orange wedge. Flip upside down and fully coat each martini glass rim with sugar and pieces of lemon zest. Set aside.

  3. Into a cocktail shaker, add lemon juice, orange juice, water, mint leaves, and lastly few handfuls of ice. No muddling here. Just shake vigorously for 10-15 seconds.

  4. Quickly pour a 1/2 oz of your vanilla coconut simple syrup into EACH of your empty martini glasses. Carefully, evenly distribute mocktail into both glasses. Many cocktail shakers have a strainer built into the lid so use this to pour into the martini glasses. When pouring into the glasses, keep the strainer as close to the glasses as possible to keep from splashing, this will help keep the simple syrup at the bottom instead of fully mixing. Almost like a layered drink, the light lemon drop martini mixture floating above the dark simple syrup at the bottom.

  5. Garnish with 2 oz soda water into EACH glass, and a sprig of “spanked”*** mint. (Slapping the sprig of mint between your hands to help release the aroma from the oils inside of the plant.)

  6. Enjoy immediately with your favorite cheese (like this Brie) and crackers!
