Raspberry Coconut Daiquiri Mocktail

Whether you are sober curious, in a dry month from alcohol, or just wanting to feel your very best, mocktails are our best friends! For me, my experiences at home making mocktails are always fun and so darn tasty. On the other hand, I find that when I am eating out with friends, 75% of my mocktails I order are either bland or just soda with some juice added to it. Which begs the question…why can’t mocktails be as beautiful, delicious, and exciting as cocktails just because they don’t have any alcohol in them??

It seems that restaurants put all this time into making gorgeous well crafted cocktails paired with the menu, just to drop the ball on the non alcohol ones. Yes, I understand alcoholic drinks are at a higher price point than virgin ones, but that doesn’t mean to forget about them all entirely right?

This mocktail is not only yummy but it’s also super bright and beautiful. I used frozen raspberries instead of fresh ones because I find that it makes the color of the drink a lot more pink/red, and coconut milk because it’s a bit thicker and creamier than other plant milk alternatives which gives this mocktail a smooth mouth feel. Plus it’s packed with antioxidants, electrolytes, which helps strengthens the immune system and promotes gut health.

Makes 2 mocktails:

(1 shot= 1- 1.5oz depending on the shot glass)

The Goods:

  • 1/4 cup frozen raspberries

  • 1 1/2 shots agave syrup

  • 6 shots unsweetened coconut milk

  • 1.5oz lime juice (2-3 limes)

  • 2 cups ice

The Method:

  1. Grab two martini glasses, set aside.

  2. Next, add add your agave and raspberries into a cocktail shaker. Muddle the berries for 10 seconds in the syrup.

  3. Now pour in your coconut milk, lime juice, and ice cubes.

  4. Cover with lid and shake vigorously for 15-20 seconds. Carefully, double strain the liquid with two strainers into both martini glasses for a clean pour. If you decide to only single strain, you may have some clumps of raspberries.

  5. Garnish with thin lime slice or blood orange slice.

  6. Enjoy!
