Peanut Butter Cup Brownies

There are two different kinds of brownies in this world, the crispier and dryer kind, and the ooey gooey fudgy kind. These peanut butter cup brownies fall in the latter category. They have a sweet, chocolatey center with a velvety soft texture, & topped with a creamy peanut butter, it’s so frickin’ good you’ll forget they are gluten free and vegan. Made with simple clean ingredients like unrefined coconut sugar, oat flour, raw cacao, and chia seed powder. You truly can have what you want, while eating what you need!

Makes 9 brownie squares:

The Goods:

  • 2 tbsp chia seed powder

  • 1/3 cup filtered water 

  • 1/2 cup melted coconut oil or apple sauce 

  • 1/2 cup water unsweetened plant milk

  • 1 1/2 cups coconut sugar 

  • 3/4 cup cacao powder 

  • 1 1/2 cup oat flour

  • 1/2 tsp salt

  • 1/4 cup creamy unsalted and unsweetened peanut butter 

  • 1/2 cup vegan dark chocolate chips

The Method:

  1. Preheat oven to 350.

  2. In a large mixing bowl, add you chia seed powder and water. Let it sit for 20 seconds for the chia to absorb the water, and then stir until it’s fully mixed.

  3. Add the next few ingredients one by one into the bowl as you stir them in. First add the melted coconut oil and plant milk. Then add the coconut sugar, cacao powder and stir it into the mixture completely.

  4. As you continue to stir, toss in the oat flour and salt. Mix and stir until you have a beautiful fudgy brownie batter.

  5. Line a 9x9 baking dish with parchment paper and pour your batter in with a rubber spatula. Smooth out the sides until you have an even flat surface.

  6. Take the peanut butter and carefully pour drops over the top of your brownies. Then take the tip of a toothpick and lightly move it side to side a few times over the surface to create a swirl effect.

  7. Garnish with chocolate chips and then bake at 350 for 30 minutes, uncovered.

  8. Once done, remove from the oven and let it cool for a few minutes. Then carefully remove the brownies from the pan with edges of the parchment paper. Let it sit for 10-15 minutes until it’s time to cut the squares and enjoy this amazingly yummy peanut butter cup brownies!
