Gingerly Chili Edamame Pods

Edamame is one of my favorite plant sources of protein. Anytime we go out to grab vegan sushi, you can bet 100% that I am ordering the edamame as an appetizer. Edamame or green soybeans are packed full of nutrients like folate, manganese, fiber, protein, and contain zero cholesterol and low in saturated fats. You could even call them a super food.

They are super versatile too, you can steam them, boil them, or my most preferred way, sauté. In this recipe, I of course sautéed them, especially with all the fixings like garlic, sesame, ginger, lime, and chili oil. This dish is super easy and simple to make, I was almost hesitant to put it on my blog, but honestly sometimes it’s nice to go back to the basics. I find that being a chef, I try to create elaborate recipes, when sometimes it’s the user friendly, simpler ones that most people want and need in their life.

Serves 2-3 people

The Goods:

  • 1 tsp sesame oil

  • 1 (14oz) bag frozen edamame pods

  • 1 tsp granulated garlic

  • 3 tbsp Big Tree Farms Gingerly Lime Coconut Aminos

  • 1 tsp flakey sea salt

  • 1/2 tsp spicy chili oil

The Method:

  1. First, heat sesame oil in a large sauté pan on medium high heat. Once hot, add edamame pods and saute for 2-3 minutes. Cover with a lid and cook for 30-45 seconds.

  2. Uncover, then add granulated garlic, and sauté for another 2-3 minutes. Afterwards, cover with a lid and cook for 30-45 seconds.

  3. Once again, uncover, and test the softness. The pods should have softened by now, add your gingerly lime coconut aminos. This will steam up quite a bit, so be careful as you pour it in.

  4. Cook and sauté for another 1-2 minutes, then remove from heat. (Total cooking time about 6-8 minutes if frozen) (Divide the time in half if fresh)

  5. Quickly add edamame pods into a serving bowl. Toss with flaky sea salt and chili oil, serve immediately while still warm. Perfect appetizer or mid day snack!
