Makes 9 popsicles

The Goods:

  • 1 can full fat organic coconut milk

  • 1 cup cashew milk or plant milk of choice

  • 1/4 cup coconut sugar

  • 1/2 tsp vanilla extract

  • 1 tbsp tapioca flour

  • 6-7 vegan chocolate creme cookies

The Method:

  1. In a sauce pan over low heat combine coconut milk, cashew milk. coconut sugar, vanilla and tapioca flour. Mix with a whisk for about 5 minutes until the mixture starts to slightly thicken.

  2. In a separate bowl with a wooden spoon, smash the cookies then add those cookies to your milk mixture. Let cool for about 10-15 minutes.

  3. Pour into popsicle molds and freeze for at least 6 hours.

  4. Enjoy within a few weeks for best results!
