Bai’s Butter Finger Bites

Sweet. Crunchy. Homemade. These butterfinger bites are the perfect substitute for this halloween season. Dairy free, refined sugar free, and gluten free. Grab your kids, friends, and family and create some delicious home made candy bars! Makes about 16 bite size bars and they are perfect all year round, not just for halloween. Made with simple ingredients and ready in just under an hour. Happy Holidays!

Makes about 16 bites

The Goods:

For the butterfingers:

  • 1 1/2 cup peanut butter

  • 1/2 cup coconut sugar

  • 1/2 cup maple syrup

  • 2 cup organic corn flakes:

For the chocolate layer:

  • 1 cup vegan chocolate chips (+ extra if dunking the entire bar)

  • 1 tbsp melted coconut oil

The Method:

  1. In a small mixing bowl, add the peanut butter, coconut sugar, and maple syrup together with a rubber spatula. Once your mixture is thick and mixed, set aside.

  2. In a separate bowl, add the corn flakes and smash into small tiny bits with a potato smasher. When you have a crumble, add the corn crumbs into batter using a fork or a wooden spoon until fully mixed.

  3. Line a 9x9 baking pan with parchment paper, pour, and press the butterfinger batter until flattened evenly across. You can use a mason jar to help press the batter down until it’s one big block in the 9x9 pan. Cover and refrigerate for 30-40 minutes.

  4. On the last 10 minutes of the butterfingers setting in the fridge, create the chocolate drizzle. In a separate or clean sauce pan, heat the chocolate chips and coconut oil on medium low heat. Stir with a rubber spatula consistently for 3-5 minutes until chocolate mixture is melted and fluid.

  5. When the bites have set and the chocolate is melted. Pull the butterfingers out of the 9x9 pan and cut three slices on each side for 16 even bites.

  6. Slowly drizzle chocolate over bites any way you desire. Drizzle. Dunk half. Dunk whole. Layer over the top. It’s your candy bars, have fun with it. (If you are going to dunk them, you will most likely need extra chocolate.)

  7. Once the butterfinger bites are covered in chocolate, chill in the fridge for 5 minutes for the chocolate to harden.

  8. Keep them in the freezer and let them thaw for 3-5 minutes before enjoying each one!
