Spicy Barbie Refresher Mocktail

Welcome to another addition to my new series of large batch mocktail recipes called “Magic Mocktails!”. This series is focused on meal prepping mocktail concentrates to keep in the fridge for a quick refreshment that is always on hand this summer. I was inspired to create this series for those moments when it’s really hot out and all you want is a cold refreshing drink…. besides bubbly water. No offensive to cold water, I’m just looking for something more! I wanted to make it simple and easy to have pre-made prepared mocktail concentrates in the fridge for just yourself over a few days, or for a late afternoon BBQ with friends. Something delicious with simple ingredients, and quick to whip up in a jiffy.

This one particularly is extra refreshing as its my twist on a lemonade. With just a few ingredients this pitcher will not only work perfectly as a refreshing meal prep, but it also is an amazing mixer to bring to a late summer gathering and mix with none other than, Mezcal. We recently had a housewarming party and made a double batch and it was a HUGE hit! You get so much flavor plus all of the B vitamins, the antioxidants and the natural electrolytes so you’ll feel hydrated and hyped to close out the summer.

This mocktail is not only delicious, but also a great choice for summertime to beat the heat while enjoying a refreshing beverage. Makes one 64oz Pitcher:

The Goods:

  • 1 small watermelon, peeled and sliced

  • 3 lemons, cut in half

  • 1/2 cup agave nectar (more if needed)

  • 1 jalapeno, sliced

  • 1/2 cup raspberries

    Garnish:

  • Lemon Rind

  • Raspberries

The Method:

  1. First step is to blend the watermelon and the lemons together just until combined. Careful not to over blend and walk away while blending as it will turn bitter. Once it’s blended, pour the mixture through a fine mesh strainer into a large bowl. You can use a spoon to help get the liquid though the strainer.

  2. Grab a large pitcher, then add the mixture and agave into it and stir with a whisk for 30 seconds.

  3. Next, add the jalapeño and let sit for at least 30 minutes to infuse that spicy flavor.

  4. To serve, grab tall collins glasses and add half the raspberries into each glass. Use a muddler to small them down. Fill the rest of the glass with ice and then top with the lemonade!

  5. Garnish with a lemon twist and a raspberry. Enjoy immediately!

  6. Keep a cap on the pitcher and store in the fridge for 4-6 days. Pour yourself a cooling refreshment this summer when the temperatures get hot!
