Apple Cider Rum-tini

The end of the year is rounding the corner, maybe it’s just me, but I think it’s time for all of us to celebrate. To celebrate all the big and small wins from the last year. May this rum-tini be my cheers to you!

This cocktail highlights the spirit of the holidays and the best part is its all inclusive, you can make it a mocktail for everyone to enjoy. Just omit the dark rum for extra spiced apple cider. You can make larger batches of the simple syrup for drinks all night long. It’s a 1:1 ratio of water to coconut sugar.

When the days get shorter and the nights grow longer, cozy up with this cocktail next to the fire place this winter. Serve it on the rocks, with glasses full of ice, or serve it up without ice in a martini glass to get real fancy with it. Enjoy!

Makes 2 cocktails:

The Goods:

Equipment:

  • Cocktail shaker with lid strainer

  • 2 rocks glasses

  • Ice

  • small plate

  • small sauce pan for simple syrup

For the coconut sugar simple syrup:

For the maple & cinnamon rim: (poured onto a plate)

  • 3 tbsp maple syrup

  • 3 tbsp cinnamon

For the rum-tini:

  • 4 oz dark rum of choice

  • 2 oz spiced apple cider

  • 1 lime juiced

  • 1 1/2 oz simple syrup

  • garnish with dusting of cinnamon and cinnamon stick (optional)

The Method:

  1. First step is to create your simple syrup. Into a small sauce pan, add water, coconut sugar and turn onto medium high heat. While stirring, heat up to a simmer, (not boiling) then dissolve the coconut sugar into the water. Once all the sugar has dissolved, remove from heat and set aside to cool. Simple sugar keeps in the fridge for 4-5 days.

  2. Next prep your glasses with a cinnamon maple rim. With your plate of cinnamon and maple mixture ready, grab a lime wedge, moist the rim, and flip the glass upside down onto the plate in a circular motion. Fill glasses 3/4 full with fresh ice for rocks glasses or no ice for martini glasses. Set aside.

  3. Now, add the rum, apple cider, lime, and simple syrup into a cocktail shaker with 2 handfuls of ice.

  4. Shake hard for 15-20 seconds. Strain into both glasses equally.

  5. Garnish with dusting of cinnamon and cinnamon stick!
