Mini Pistachio Caramels

Dates! They are natures super fruit sweetener. I love to use dates in dessert recipes because they add a natural caramel like taste, have tons of health benefits (promotes brain and heart health, improves digestion and skin, helps detoxify the body) and they act as the perfect binder with its stickiness texture. For this sweet treat, I used soaked dates which helped turn it into malleable crust for these mini pistachio caramels. Popped them into the pan, poured some dark chocolate because cacao has extra antioxidants and nutrients that promotes a healthy metabolism….and well who doesn’t love chocolate? Then topped it off with pistachios for that nutty flavor that you can only find from pistachio.

Makes about 16-18 mini bark bites:

The Goods:

  • 21 pitted dates, soaked in hot water for 15 minutes

  • 2 tbsp filtered water

  • 1 cup dark chocolate chips, melted

  • 2 tsp coconut oil, optional

  • 1/2 cup pistachios, minced

The Method:

  1. Grab a food processor and add all your soaked dates with the 2 tbsp water, then blend on low for 2-4 minutes until you have a caramel. If you are having trouble blending, add another splash of water. Set aside.

  2. Next, melt the chocolate chips in a double boiler or in the microwave in 30 second increments. Optional to add coconut oil to help make the chocolate more fluid. Once the chocolate is melted, set aside.

  3. Grab a silicone mini muffin tray and add one tablespoon of the date caramel to the bottom of each round pocket. Press it down smoothly to create a bottom layer of dates. Then pour a tablespoon of melted chocolate over the top of the caramel for each.

  4. Sprinkle with a dusting of pistachio crumbles. Repeat into each pocket until you have used all the ingredients. Place the whole tray into the freezer and let it set for 2-3 hours. Once the mini bark bites are set, remove them from the tray and place them into an airtight container and leave them in the freezer for a cold treat!
