The Day Dream Chia Smoothie

Over the last few weeks I’ve been really leaning into eating fresh fruits and veggies most of the day! After an incredibly rainy winter here in San Diego, I think I’ve had enough comfort food to last me a lifetime. With that, I naturally am leaning towards a more raw vegan way of being while the sun is shining. Something I like to call “Raw Til 4”! It’s such an epic way to use the most out of seasonal produce, get creative and give your gut the loving it needs.

I’ve been living on this smoothie chia pudding in the mornings. The best part is that you can meal prep the chia pudding before hand (has about 5 servings) and then just make the smoothie when you’re ready for it! Its the best of both worlds and its packed with protein, plant fiber, vitamins and nutrients.

For The Chia Pudding:

  • 1 packet dragonfruit (3.5oz)

  • 2 1/2 cups plant milk

  • 1 tbsp maple syrup

  • 3/4 cup chia seeds

For The Smoothie:

  • 2 frozen bananas

  • 1 cup frozen mango

  • 1 whole medium orange, peeled

  • 3 tbsp hemp seeds

  • 1 cup hibiscus tea

The Method:

  1. Grab a blender and add everything for the chia pudding besides the chia seeds. Blend for 30 seconds or until well combined.

  2. In a 32 oz mason jar, pour the chia seeds in first and then slowly add in the bright pink liquid from the blender while stirring with a fork. Be sure to break apart all the clumps of chia. Set aside for 30 minutes while stirring every 5-10 minutes. You can also make this ahead of time!

  3. Once your chia is made, grab your blender again and add all the ingredients for the smoothie. Blend until smooth.

  4. Grab a glass and pour the chia pudding on the bottom half and top with the smoothie. Enjoy immediately!
