No-Bake Peanut Butter Chocolate Cookie Dough Bars

Who doesn’t love a good dose of chocolate in their lives? I personally always need some dark chocolate on hand at all times for you know… emergencies! These bars were originally cookie dough balls that one of my clients kids are obsessed with. With a change of seasons I needed a change of shape and to be real, these are a huge hit!

Super simple with just a 7 ingredients and a few minutes these will be your next favorite snack, too!

The Goods:

  • 1 jar creamy peanut butter

  • 1/4 cup maple syrup

  • 1 cup almond meal

  • 2 tsp vanilla extract

  • 1/2 tsp salt + more for the top

  • 1 cup dark chocolate chips

  • 1 tbsp coconut oil

The Method:

  1. In a bowl, combine peanut butter, maple syrup and vanilla extract. Mix well.

  2. Add in almond meal and salt and mix until combined.

  3. Grab a 11 x 7 pan and line it with parchment. Add the peanut butter mixture to the lined pan and flatten so its smooth.

  4. In a pan on the stovetop over low heat, add the chocolate and coconut oil. Stir with a spatula until melted - do not walk away from this as it will burn!

  5. Pour chocolate over the peanut butter mixture. Put in the freezer to set for 7-8 minutes.

  6. Sprinkle flakey salt over the top and slice.

  7. Store in refrigerator and enjoy!
