Double Dark Chocolate Crunch Bars

Double chocolate? Yes please. I was craving a sweet treat the other day and only had a couple minutes. I wanted something chocolatey, nutty and oh so satisfying so naturally I made these. Luckily this recipe can be made with common pantry ingredients and all you need to wait for is the chocolate to set in the freezer.

Since I was a pastry chef in my old life, I have become really fond of making simple desserts that still hit the spot. Gluten-free, dairy-free and vegan desserts are no walk in the park and sometimes simplicity takes the cake. I hope you enjoy these bars as much as I do and be sure to hide some away from your kids or housemates as they’ll be gone ASAP!

Makes 10 bars or 20 squares:

The Goods:

  • 1 cup almond butter

  • 1/2 cup maple syrup

  • 1/4 cup melted coconut oil

  • 1/4 cup cacao powder

  • 2 1/2 cups brown rice crisp cereal

  • 1 cup melted chocolate chips

  • flakey sea salt

The Method:

  1. Prepare a 9X9 baking dish with parchment paper.

  2. In a large mixing bowl, mix the almond butter, maple syrup, melted coconut oil and cacao powder. Mix until it resembles a brownie batter and all the cacao is well mixed.

  3. Fold in the rice crisp cereal and fold with a rubber spatula until well combined. Add the mixture to the prepared baking dish and press down until you have an even flat surface. Freeze for 10 minutes.

  4. While it’s freezing, melt your chocolate either in a double boiler or in the microwave in 15 second increments while stirring in-between.

  5. Pour the melted chocolate over the top of the baking dish and sprinkle with flakey sea salt. Freeze for at least 10 more minutes and then cut into squares. Keep covered in the freezer for best results!
