These pancakes are AMAZING! Most pancakes are honestly so boring.  These however, are in a completely different league… Gluten free and packed with protein, these babies will have you fighting for the last one. The coconut cream on top gives it that brunch flare while still adding nutritional value.  Top these cakes with fresh fruit, chia seeds, and your favorite kind of syrup. 


Your weekday mornings will thank you. 


The Goods: 

For the pancakes: 

1 cup unsweetened almond milk 

1 tsp apple cider vinegar 

1 tsp chia seeds 

3 tsp water 

1 tsp flax seeds 

1 very ripe mashed banana

1/2 cup cashews 

1/2 cup GF flour blend 

1 tsp cinnamon

1/2 tsp baking powder

1/2 tsp baking soda

1/2 cup cooked quinoa

1/4 cup cacao nibs 

1/2 tsp sea salt 

1 tsp vanilla extract

coconut oil for frying 


For the whipped topping: 

1 can of coconut milk (PRO TIP- let can chill in refrigerator the night before) 

1 tsp cinnamon

2 Tbl agave nectar (more to taste if desired) 



The Method: 

In a small glass, mix chia seeds with water and let sit for about 10 minutes.  In a food processor, add cashews and turn on low until cashews turn into an even meal. Add in the flour, baking powder, baking soda, cinnamon, flax seeds, quinoa, cacao nibs and salt. Pulse until well mixed. Add milk, banana, apple cider vinegar, vanilla, and the chia water mixture. Pulse again just until well blended.  Let sit in refrigerator for 5 minutes. 


While batter is sitting…. 


Open the can of coconut milk and carefully skim off the cream off the top, leaving the water in the bottom for a later date. Add to a big bowl as well as the cinnamon and agave nectar.  Whisk until soft peaks form. My favorite arm workout! 


Heat a large skillet over medium heat and add about a teaspoon of coconut oil per batch.  Grab the batter out of the fridge.  Pour 3 inch wide cakes(or whatever shape your feeling) a few inches from each other. Once the batter starts bubbling you know its time to flip it over. Use a flexible and trusty spatula.  Cook the other side for about one minute. 


Stack on a plate and top with cream, more nibs, syrup and fruit! Boom!
