This recipe came to me while experimenting for a kick-ass summer slaw without all of the calories.

Serves 6

The Goods:

1/2 head of cabbage (washed and thinly sliced)

1 cucumber (peeled and thinly sliced)

1 gala apple (washed, cored and thinly sliced)

1 orange bell pepper (washed, cored and thinly sliced)

The Dressing:

1/2 cup avocado oil

1/4 cup apple cider vinegar

1 tbl. local honey

1 tsp prepared horseradish

Salt & Pepper (to taste)


The Method:

Add all sliced veggies to a large bowl and toss well.  In a smaller separate bowl, whisk together all ingredients for dressing.  Pour dressing over veggies and toss until well incorporated.  For best results, let the slaw sit and marinate overnight before serving!
