Pop’s Refried Beans

 

These beans are perfect for taco Tuesday! Pair with chicken, beef or sautéed peppers for the perfect do-it-yourself tacos.  You’ll never eat canned refried beans again.

 

The Goods:

3 cups dry pinto beans

6 cups water

3 tbl. Butter (coconut oil for vegan)

2 tsp. chili powder

1 tsp. cumin

1 tsp. garlic powder

2 bay leafs

 

The Method:

Soak the beans in water overnight.  The next day add the beans and water to a pressure cooker.  Seal tight and cook on high for 10 minutes.  Lower the heat and cook for another 45 minutes on low. 

Mash the beans with a potato masher and add the butter.  Add the spices and mash until desired consistency. Salt to taste!
