Over the course of the last week I was hit with one of the WORST colds I have ever experienced.  I got to the point where NOTHING was helping.  Whenever I get sick I can usually fill my body up with holistic remedies and boom- 24 hours and its gone.  This time - not so easy.  This thing lasted 7 days. I gathered together the most powerful ingredients to kick this cold, added them all together in a soup, cooked it just right - and you know what? It actually helped! Double the recipe to have enough for a few days and DETOX yourself. 

 

These ingredients all have a purpose - check it out. 

 

Pure Olive Oil - Olive oil in its most pure and organic form has more anti- inflammatory properties in one tablespoon than 2 ibuprofen. Fun fact? Dr. Stewart Adams (the guy who invented ibuprofen) was an olive oil connoisseur.  You know if your olive oil is pure when it tastes like ibuprofen! Coincidence? I think not. 

Leeks- Contain many nutrients, most importantly for this cold issue, vitamin C. Also contains anti-inflammatory properties. 

Garlic- Known as the plant kingdoms most potent antibiotic! It helps fight infection and is a huge boost to the immune system. 

Ginger- Contains nearly a dozen antiviral compounds as well as doubles a pain relieving antiseptic and antibiotic. It also reduces pain, fever and helps you sleep! 

Carrots- These little wonders contain beta carotene among a ton of other nutrients.  Did you know your body absorbs 90% more of the beta carotene when carrots are cooked?  Hence why they're in this soup! 

Turmeric- This ancient spice has been used for thousands of years for its healing properties. I literally put turmeric in everything these days. Why? Because it works just as well as most anti-inflammatory drugs without any side effects.  Next blog post? I think so! 

Cayenne- Hot chilies naturally relieve sinus pressure - the more the merrier! 

Apple Cider Vinegar- Quite simply- this stuff is amazing. Its got anti viral, anti bacterial, anti fungal AND anti septic properties. 

Lemon- VITAMIN C BABY. 

Coconut Milk- Provides electrolytes, protein, and helps build immunity.  Not to mention it is the perfect thickener to any soup. Yummmmmy. 

Avocado- High in healthy fats, fiber and contain over 20 nutrients! 

 


Now that were a little more educated on why - lets dive into HOW.  

 

The Goods:

  • 3 Tbl Pure Olive Oil
  • 2 Leeks (Chopped- only use the white and light green part)
  • 8 Large Carrots (Peeled and roughly chopped) 
  • 4 Cloves Garlic (Minced)
  • 1 Tbl Ginger (Peeled and roughly chopped) 
  • 2 tsp. Turmeric 
  • 1 tsp Cayenne 
  • 2 tsp Apple Cider Vingar
  • 1 cup Vegetable Stock 
  • 1 can Coconut Milk (save splash for garnish)
  • 1 Lemon (Juiced)
  • 1 Avocado (for garnish)
  • Handfull of Micro Greens (for garnish)
  • Salt and Pepper to taste

The Method: 

On the stove top, in a large stock pot over medium heat, add in olive oil.  Once oil is hot add in the leeks and garlic.  Stir constantly until brown.  Toss in the ginger, cayenne, and turmeric. Sir for about one minute until spices are toasted and the aroma starts to fill your kitchen.  Add in the vinegar and carrots.  Let it cook for another 2 or 3 minutes stirring occasionally. Finally, add in the coconut milk and stock and stir well. Cover and let simmer on low for 40 minutes, 

Add the cooked ingredients into a Vitamix or Ninja blender. Add lemon juice and blend on high until all ingredients are smooth and blended.  

Pour into a bowl and top with avocado, salt, pepper, micro greens and a splash of coconut milk.
